Unibroue Beer
Unibroue beers are manufactured from natural ingredients only, namely water, malted barley, malted or raw wheat, corn, spices, sugar and yeasts. Unibroue uses state-of-the-art equipment and rigorously follows each step of the manufacturing of its beer.
Unibroue beers are different. Brewed using an age-old process of in-bottle refermentation (with the exception of the U, U2, and La Bolduc), they are only partially filtered rather than totally filtered (which is the norm in today’s beer industry). This means Unibroue beers keep all their protein and part of the yeast, producing a genuine upscale beer. These beers are on fresh lees. The lees deposit themselves at the bottom of the bottle as result of refermentation and natural carbonation. The process is the same as with champagne; except with champagne, the yeast is removed, while with Unibroue beers the lees are left in the bottle. This method gives a very particular taste to the beer and provides a natural source of vitamin B. Every single beer is brewed in one batch and is not water-softened.
The brewing methods used by Unibroue have been inspired by the great European brewing traditions and, in this respect, are one of a kind in North America. The methods used stand out, in particular, from the brewing methods of the mass-producing breweries and even from the other North American craft brewers because the beer is refermented in bottles and partly-clarified only. Through these methods, specialty beers with an evolutive taste and a long shelf life are produced. The manufacturing of the beer at Unibroue is done in five phases: brewing, fermentation, clarification, bottling and kegging and, finally, refermentation in bottles in the holding room.
It is unnecessary to add preservatives or to pasteurize the beer, a process that makes the beer sterile and without a soul. So grab yourself a bottle of this age old traditional style beer and let your taste buds do the talking.

Blanche De Chambly

(White of Chambly) was the first bottle refermented ale produced by Unibroue. It is brewed from a blend of pale barley malt, wheat malt and unmalted wheat, to which we blend selected spices and hops.
Blanche de Chambly is only partially filtered, retaining its natural cloud of yeast that is characteristic of the original white ales brewed during the Middle Ages.

Trois Pistoles (Three Coins) is named after a small village in the region of Les Basques in Québec.
Founded over 300 years ago, Trois Pistoles gave birth to several legends, including one about a sailor who dropped his tumbler overboard and exclaimed, "Trois Pistoles!" in reference to its worth in old Spanish currency.
Another, the Legend of the Black Horse, involved a local bishop who conjured up a good devil (appearing in the form of bridled black steed) to haul large brick stones to construct a new church. When someone accidentally removed the bridle, the black horse suddenly vanished just as the last remaining stone was to be set. This stone is
still missing, as can be seen when visiting the village church in Trois Pistoles.

Don de Dieu (Gift of God) is named after the ship commanded by Samuel de Champlain de Brouage, who was commissioned by France's King Henry IV to explore the vast, unknown territory of Nouvelle-France.
In June 1608, Champlain sailed the Don de Dieu up the St. Lawrence River to a point where it narrows between high cliffs, a site that could easily be defended. Champlain landed the ship and founded a new settlement he christened Québec, modifying the Algonquin word "Kebec," which means " where the river narrows."

The label depicts a fairy, an ephemeral spirit associated with fruits picked at the peak of ripeness during each harvest season.
Éphémère apple flavor is brewed with apple must, which consists of the freshly-pressed juice from apples.
