Ingredients:
2/3 cup bourbon or Whiskey
1 cup clover honey
1/3 cup molasses
1/2 cup 100 percent fruit orange marmalade
Nonstick cooking spray
1 (5-pound) whole bone-in smoked ham, fully cooked, unsliced
1/8 cup whole cloves

Directions:
Preheat oven to 350 degrees F. In a medium saucepan, heat bourbon, honey, molasses, and marmalade over low heat for 15 minutes or until reduced by half, stirring occasionally. (When measuring honey and molasses, spray the measuring cup with nonstick cooking spray to keep measurements accurate.) Set aside. With a sharp knife, cut a diamond pattern on the fatty part of the ham. Stud whole cloves in each diamond, at points where nes cross. Spread half of the bourbon glaze over the ham and roast for 30 minutes, uncovered. Baste occasionally with remaining glaze and continue to roast for another 15 minutes. Let ham stand for 20 minutes before slicing.

Ingredients:
1 1/2 pounds catfish fillets, cut in strips
2 teaspoons Cajun-style blackened seasoning
4 tablespoons mayonnaise
1/2 cup butter
1 cup sliced fresh mushrooms
1/2 cup chopped fresh parsley
1 cup sliced green onions
1 pound small, peeled shrimp
2 (10.75 oz) cans condensed cream of shrimp soup

Directions:
Sprinkle catfish strips with blackened fish seasoning Spread catfish with mayonnaise. Place in a shallow dish, cover and refrigerate for 1 hour. In a large skillet, heat 4 tablespoons butter until it begins to sizzle. Sear the fish strips until golden, turning once. transfer to a 9x13 inch baking dish, and arrange fish in a single layer. In the same skillet, heat remaining 4 tablespoons butter over medium heat. Cook and stir mushrooms in butter until golden. Stir in parsley, green onions, and shrimp. Reduce heat to low, and cook until shrimp are pink and tender. Stir in cream of shrimp soup, and blend well. Ladle soup mixture over fish in baking dish. Bake at 375 degrees F for 30 minutes.

2 small acorn squash, cut in half, seeds removed

Directions:
Pour an equal amount of Caribbean Black Beans into the center of each seeded acorn half. Wrap each squash in a foil wrap, and place on a baking sheet. Bake at 350* for 45 minutes or until tender when poked with a fork. Remove the foil and place on a serving platter.

Chilled Strawberry-Watermelon Soup-Serve with Dry Rose

This soup makes a refreshing first course for a summertime meal.

Ingredients:
2-1/2 pints fresh strawberries, rinsed, drained, and hulled
1/3 cup sugar
2-1/2 cups seedless watermelon, cut into chunks
Juice of 1 lemon
Juice of 1 orange
Sprigs of fresh mint or lemon thyme

Directions:
Slice one pint of the berries into a bowl and sprinkle with the sugar. Set aside for 15 min. Transfer the sliced berries and their juice to the bowl of a food processor. Add the watermelon, the lemon juice, and the orange juice and process to a smooth purée. Transfer the purée to a bowl and refrigerate for 30 to 60 min., until cold. When you are ready to serve the soup, evenly divide the “broth” among 4 dessert bowls; glass is nice. Slice the remaining strawberries thin, and add some slices to each bowl. Garnish with sprigs of mint or lemon thyme, and serve at once.

Ingredients:
1/2 pint (8 oz) of simple syrup
1 pint (16 oz) of distilled water
3/4 pint (10 oz) of lemon juice
1 750 ml bottle (24 oz) of Pisco Porton
1 fresh pineapple

Directions:
Cut a fresh pineapple in squares about 1/2 by 1 1/2 inches. Put these squares of fresh pineapple in a bowl of simple syrup to soak overnight. In the morning, mix the rest of the ingredients in a big bowl. Use 3 or 4 oz. of punch per glass adding a square of the soaked pineapple to each. Lemon juice or simple syrup may be added to taste. Serve very cold. Simple Syrup Recipe: Using two parts sugar and one part water, bring the water to a boil in a saucepan. Dissolve the sugar into the boiling water, stirring constantly. Once the sugar is dissolved completely, remove the pan from the heat. Do not allow the syrup to boil for too long or the syrup will be too thick. Allow to cool completely and thicken, then bottle. The cook time is approximately five minutes.

½ oz half-and-half
1 ½ cups ice cubes, cocktail size
Pomegranate concentrate for garnish

Directions:
Place the first six ingredients into a blender and blend them until combined. Add the ice and blend until the mixture is smooth, light and pomegranate concentrate over top. Using a small drink saw, from the top of the zigzag pattern pull through the center to Make a series of pomegranate hearts. Serve.

Directions:
Muddle strawberries, then add the liquid ingredients and ice to a mixing tin. Shake vigorously and strain into a coupe cocktail glass. Garnish with a dusting of freshly grated cinnamon and serve.
