Juice of 1 lime
Directions:
Mix ingredients in a mixing tin half-filled with ice. shake until the tin is frosted, drain into a highball glass over fresh ice, garnish with a fresh lime wedge and serve with a cocktail stirrer.

2 oz Irish Rye/Whiskey
4 oz Sweet and Sour Mix Maraschino Cherry

Mix and shake Irish Whiskey, Midori, and apple schnapps with ice. Fill Whiskey sour glass with ice. Drain mixture over ice in a glass. Fill with sweet and sour mix. Garnish with several free-floating maraschino cherries.

1 ½ part Cherry syrup

Duval St. Key Lime Cocktail

1/3 part simple syrup
4 parts crushed ice
Directions:
Combine all ingredients in a blender until smooth as silk. Use bottled key lime juice, since squeezing tiny key limes is one of those things for which life is truly too short. Pour into a collins glass with a key lime slice...and crumbled graham crackers.

96 oz. pineapple juice
8 oz. lime juice
56 oz. Schweppes Ginger Ale
28 oz. Schweppes Club Soda
24 oz. orange juice
2 cups of sugar
12 oz. lemon juice
Directions:
Mix the sugar and juices in a blender. drain over a block of ice into the punch bowl. Add the Ginger Ale and Club Soda. Stir gently to properly mix all the ingredients. makes approx 70 - 4 oz servings. TIP Have a shot glass and some rum, gin or vodka nearby for those guests who wish to add a little spirit to their drink.

Ingredients:
6 lean pork chops (may use 4 or 5)
1 box Stove Top pork stuffing mix
1 can cream of mushroom soup
Directions:
Line 13 x 9-inch pan with aluminum foil on bottom and sides. Heat oven to 300 degrees. Make stuffing according to directions on the box. Brown pork chops and arrange in the bottom of the pan. Top each pork chop with equally divided dressing Spoon undiluted soup on top of dressing and chops. Cover pan completely with foil and seal edges. Bake at 300 degrees for 2 to 2 1/2 hours.

Eggnog Martini

Ingredients:
1 cup of sugar
1/4 cup cornstarch
1 teaspoon ground nutmeg
1 teaspoon pumpkin pie spice, plus more for garnish
8 cups whole milk
6 large egg yolks
3 cups brandy
Directions:
Set a large fine-mesh sieve over a large bowl. Place the bottom of bowl in an ice bath; set aside. Off heat, in a medium saucepan, whisk together sugar, cornstarch, nutmeg, and pumpkin pie spice. Gradually whisk in 4 cups milk, taking care to incorporate the cornstarch. Whisk in egg yolks. Whisking constantly, cook over medium heat until the first large bubble sputters, 10 to 12 minutes. Reduce heat to low; cook, whisking constantly, 1 minute more. Remove from heat; immediately pour through the sieve into the bowl. Stir in the remaining 4 cups milk. Let cool completely in bowl still set in the ice bath. Just before serving, stir in brandy, and ladle into glasses; garnish with pumpkin-pie spice.

Empanadas
Made with Alaskan White Ale

Ingredients:
1 lb ground beef
2 potatoes, diced
1 c Alaskan White ale
1 t cumin
1 clove garlic grated/pressed
1 medium onion, diced Salt and pepper to taste
1 T cornstarch
1 T cold water Wonton wrappers [found in the produce section of the market] cilantro sprigs (optional)
1 lb ground beef 2 potatoes, diced 1 cup Alaskan White Ale 1 t cumin 1 clove garlic grated/pressed 1
medium onion, diced Salt and pepper to taste 1 T cornstarch 1 T cold water Wonton wrappers [found in the produce section of the market] cilantro sprigs (optional)
Directions:
Brown the ground beef with a small amount of oil. Once browned, add the next 6 ingredients and cook over medium heat until the potatoes are soft. Combine cornstarch and water; add to beef mixture. Using one wonton wrapper at a time (keep others covered with a damp cloth), place 1 T of the beef mixture in the center. Moisten the edges with water and fold the edges together, pinching to seal. Preheat oven to 400°. On a greased baking sheet, place each empanada in a single layer. Spray each empanada with cooking spray. Bake for 8 min, turning once and golden brown. sprinkle with cilantro sprigs.
