Ruby Red Rocket Cocktail #2
If you would like to garnish the glass, wet the rim of a martini glass with a Little of the ruby red grapefruit juice and then dip the rim into the brown sugar.

Ingredients:
1 1/2 ounces ruby red vodka
1/2 ounce triple sec
3 ounces ruby red grapefruit juice
2 teaspoons creme de cassis or 2 teaspoons raspberry liqueur (Chambord)
coarse brown sugar (optional garnish)
Directions:
In a shaker over ice, combine the Ruby Red Vodka, triple sec, and juice. shake to mix and chill. drain into the martini glass. Slowly add the creme de cassis or raspberry liqueur so that it settles on the bottom of the glass. Serve!

1.5 oz. 100 % Agava Silver Tequila
1 oz. grapefruit juice

Pour tequila, and grapefruit juice into a shaker, shake with ice. Strain into a highball glass, lay the lime wheel on top, and pour lemon-lime soda and Viniq over lime and enjoy.

Ingredients:
1/2 Cup whole milk chilled
1/2 cup RumChata well chilled
3/4 Cup granulated sugar
2 Cups heavy cream
vanilla bean paste (to taste)
2 extra ripe bananas
Directions:
Combine the whole milk, RumChata, and sugar in a mixing bowl. Mix until sugar is dissolved by whisk or hand mixer. Stir in heavy cream and flavor to taste with vanilla bean paste. Pour mixture into ice cream maker freezer bowl. Allow churning for 20 minutes. Peel and mash 2 extra ripe bananas into a smooth texture. Add bananas to ice cream maker after 20 minutes and allow to churn for another 10 minutes. Pour into an airtight bowl and place it in the freezer. Allow ice cream to set to desired hardness.

2 oz RumChata
5 oz pkg Instant Vanilla Pudding Mix
2 c Milk
7 oz Sweetened Condensed Milk
1 tbs Vanilla Extract
12 oz Frozen Whipped Topping, thawed
16 oz Vanilla Wafers
14 Bananas, sliced
Directions:
Soak vanilla wafers and bananas in RumChata for 20 seconds; pour off the remaining liquid into a bowl with condensed milk, set aside. In a separate bowl, beat the pudding mix with milk for 2 minutes. Blend in condensed milk mixture until smooth. Stir in vanilla extract. Fold in whipped topping. Layer wafers, bananas and pudding mixture in a glass serving bowl. Chill until serving.

5 bananas, quartered
1 tsp lemon juice
1 jar (12.25 oz) caramel ice cream topping
1/2 tsp cinnamon
3 tbs RumChata

Directions:
In a skillet combine caramel topping, lemon juice, RumChata, and cinnamon and bring to a boil, stirring often. Remove from heat and gently stir in the bananas. Spoon over ice cream!

Ingredients:
2 C granulated sugar
5 large beaten eggs
1 C milk
1 C RumChata
2 t pure vanilla extract
3 C cubed Italian bread--allow to stale overnight in a bowl
1/2 C packed light brown sugar
Directions:
Preheat the oven to 350 degrees F. Grease a 13x9 pan. Mix together granulated sugar, eggs, milk, and RumChata; add vanilla. Pour over cubed bread and let sit for 10 minutes. Pour bread mixture into prepared pan. Sprinkle brown sugar over the top and bake for 35-45 minutes or until set.

RumChata Buttercream Frosting

Ingredients:
1 cup unsalted butter, softened
3-4 cups confectioners sugar, sifted
1/4 teaspoon table salt
1 tablespoon vanilla extract
Up to 4 tablespoons RumChata
Directions:
Beat butter softened (ideal texture should be like ice cream) for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn't blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of RumChata and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining RumChata - 1 Tablespoon at a time.

15 graham crackers, crushed
2 tbs butter, melted
32 oz cream cheese, softened
1 1/2 cups sugar
3/4 cup RumChata
4 eggs
1 cup sour cream
1 tbs vanilla extract
1/4 cup all-purpose flour
Ingredients:
Preheat oven to 350 degrees Fahrenheit. Grease 9" springform pan. In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan. In a large bowl, mix cream cheese with sugar until smooth. Slowly blend in RumChata and eggs. Mix in sour cream, vanilla, and flour until smooth. Pour filling over prepared crust. Bake for 1 hour. Turn off the oven and let the cake cool in oven with the door closed for 5 to 6 hours to prevent cracking. Chill in the refrigerator until serving. Top with dollops of glazed strawberries or cherry pie filling to finish, if desired.

RumChata Cupcakes

Ingredients:
1/2 cup butter (1 stick) softened
1 1/2 cups sugar
2 cups flour
2 tsp baking powder
dash salt
1 tsp cinnamon
1 cup RumChata
1 tsp vanilla extract
4 egg whites
Directions:
Preheat oven to 350 degrees. Combine sugar and butter in a mixer or use a hand mixer, beat until fluffy. In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Set aside. In a small measuring cup, mix the RumChata and vanilla together. Set aside. Alternating, add in the flour mixture and RumChata mixture. Start and end with the flour mixture. In a clean mixing bowl, beat egg whites until soft peaks form. Fold egg whites into the batter with a spatula. Fill the cupcake cups and bake for 20 minutes. Frosting: 8 oz. package of cream cheese (softened) 1/4 cup butter (1/2 stick) softened 1/2 tsp vanilla extract 3 tbsp of RumChata 1 lb. of confectioners' sugar (powdered sugar) Combine butter and cream cheese until smooth. Add vanilla extract. Slowly add the powdered sugar. Mix in the RumChata. Frost the cooled cupcakes and enjoy!

RumChata Egg Nog Latte

Directions:
Steam RumChata and egg nog in espresso maker, or heat in a pan on the stove or in a microwave, stirring constantly until temp reaches 140 degrees. Pour into a coffee mug; add espresso and dust with nutmeg.

RumChata Key Lime Pie

5 beaten egg yolks
10 oz sweetened condensed milk
6 oz RumChata
1/2 cup Key Lime juice
1 9-ounce prepared (or homemade) Graham Cracker crust.
Directions:
Preheat oven to 375 degrees Fahrenheit. In a bowl beat egg yolks and combine with sweetened condensed milk and RumChata. Gradually add Key Lime juice while continuing to mix. Pour mixture into graham cracker crust. Bake in the oven for 15 minutes, remove and allow to cool. Serve cold/chilled, topped with cool whip/whipped cream and Key Lime slices if desired. *RumChata team favorite, Chocolate Covered RumChata Key Lime Popsicles! After pie has cooled, place in refrigerator until cool and cut into slices, insert 1 skewer/kabob stick into the pointed end of pie (not through the crust). Dip/pour melted chocolate over the entirety of pie slice and place on a sheet of wax paper.* Place in the freezer ASAP- get in freezer as soon as possible to protect the shape/integrity of the pie. Freeze for a minimum of 1 hr. Enjoy. Thoroughly. *Use melted chocolate at lowest possible temperature*
