RumChata Pudding Shots

Ingredients:
1 cup RumChata
1 box of chocolate or vanilla instant pudding
1 cup milk
1 container of whipped topping
Directions:
Mix pudding, milk, and RumChata until smooth. Stir in whipped topping. Put into plastic shot containers with lids and freeze.

RumChata Pumpkin Pie

Ingredients:
6 oz RumChata
1/2 cup brown sugar
1 (15 oz) can of pumpkin
1 cup sweetened condensed milk
2 large eggs
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1, 9-inch unbaked pie crust
Directions:
Preheat oven to 425 degrees Fahrenheit. Whisk pumpkin, brown sugar, eggs, sweetened condensed milk, RumChata, spices, and salt in a medium bowl until smooth. Pour into crust and bake for 15 minutes. Reduce oven temperature to 350 degrees and continue baking for 35 to 40 minutes or until a knife, inserted 1 inch from the crust, comes out clean. Let cool. Garnish as desired.

Ingredients:
1½ oz Bulleit Rye
¾ oz Aperol
½ to ¾ oz St Germain
1 maraschino cherry, for garnish
1 flaming orange peel, for garnish
Directions:
Measure ingredients into a mixing glass. Fill it three-quarters full of ice. Stir the drink and drain into a coupe-style martini glass. Heat the orange disk with a lighter and squeeze disk over drink into flame. Garnish with a cherry.

1 tbs. creamy peanut butter
1 tbs. chocolate syrup
1/2 oz. Kahlua or coffee liqueur
1/2 oz. dark rum
1/2 oz. vodka
1 oz. almond milk

Torched mini-marshmallows for garnish
Directions:
In a pint glass, mix together the peanut butter and chocolate syrup. Stir in the Kahlua until well blended. Stir in the vodka and rum and then add the almond milk. Fill a martini shaker with ice and add mixture. Shake vigorously until very well chilled. Drizzle the insides of a martini glass with chocolate syrup. Strain cocktail into the martini glass. Put 3-4 mini-marshmallows onto a skewer and toast with a butane torch. Place over the glass.

Combine
1/2 cup sour cream
3/4 cup mayo
1/4 red onion minced
juice of 1/4 lemon
3 tablespoons dill weed or 4-5 tablespoons fresh dill.
Directions:
Season a Salmon Fillet liberally with season salt. Also, layer salmon evenly with lemon slices and red onion slices. Grill medium-low until salmon becomes flaky - roughly 20 minutes. Allow salmon to rest 5 minutes after taking off the grill. Offer the dill sauce to accompany.

Directions:
Dampen the rims of 4 martini glasses and then line the rims with sugar crystals. Combine eggnog, brandy, amaretto, nutmeg, and ice cream in a blender; process until smooth. Pour mixture into martini glasses and garnish each glass with a whole cinnamon stick.

Combine all the ingredients into a mixing glass. Pack the glass with ice and shake it vigorously for 15 to 20 seconds. drain the drink into a Margarita glass with a salt rim. Garnish with the lime wedge.

Santana Strawberry Margarita

Ingredients:
2 oz Reposado Tequila
1 oz Fresh lime juice
1 oz Triple Sec
½ oz Fresh lemon juice
1 oz Simple syrup
2 oz Strawberry Puree (see recipe)
Directions:
Combine all into mixing glass. Pack with ice and shake vigorously for 15-20 seconds. drain into a margarita glass with a salt rim. Garnish with a lime wedge. Strawberry Puree 1 pint Fresh Strawberries, stemmed 2 oz Simple syrup (add more or less depending on sweetness/tartness) Place Strawberries and add simple syrup in a blender. Blend ingredients until smooth puree forms.

Sazerac
Use 2 old-fashioned glasses.

Ingredients:
1 ½ oz Rye Whiskey
1 or 2 dashes of Herbsaint
1 tsp. Sugar
2 dashes Bitters
1 Lemon twist

Directions:
Use 2 old-fashioned glasses. In one glass, fill with ice and add sugar and bitters. The bitters will help dissolve the sugar. Next, add the Rye Whiskey. In the second glass, add and coat the glass with the Herbsaint. Remove the excess Herbsaint. Then, drain the rye Whiskey, bitters and sugar into the Herbsaint coated glass. Add the lemon twist and enjoy! Serves 1. Herbsaint is a New Orleans liqueur, which serves as a substitute in the Sazerac for Absinthe, which is now illegal. Herbsaint does have a cornice flavor, so be sure to just coat the glass with a small amount. (Cognac is another substitute for Absinthe if Herbsaint cannot be found.)

Directions:
For the marshmallows: Pour 3/4 cup bourbon into a heatproof bowl and sprinkle gelatin on top. Set aside. Grease 8-inch square pan (or 9-inch round pan). Sift together confectioner s sugar and cornstarch and dust the greased pan. Set aside. In a high-dividend pot, heat maple syrup over medium-high heat until it begins to boil, without stirring. In a stand mixer fitted with the whisk attachment, begin whipping egg whites with a pinch of salt at medium-low speed. Once frothy, slowly stream in sugar. Meanwhile, using a double boiler, melt gelatin mixture. Using a candy thermometer, cook maple syrup until it reaches 260 degrees Fahrenheit. Turn mixer to low, and then pour hot maple syrup down the sides of the mixing bowl, taking care not to hit the whisk. Turn mixer to high; pour in melted gelatin, continuing to beat until medium peaks are formed. Pour into pan, dust top with more sugar/cornstarch mixture. Allow to sit uncovered, at least 12 hours (overnight ideal), flipping over once onto a dusted work surface, such as a cutting board. Cut into desired shapes. Dredge in sugar/cornstarch mixture until no longer sticky. Store in an airtight container for up to two weeks. For the potatoes: Preheat oven to 350 degrees. Butter a gratin dish (or any shallow baking dish) and set aside. In a wide pot, combine all ingredients except potatoes and marshmallows. slice potatoes into thin 1/8-inch slices, dropping them into the pot as you go. Over medium heat, bring mixture to just an under a simmer
