Ingredients:
Cake:
3 oz. unsweetened chocolate, chopped
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
14 tablespoons (1 3/4 sticks) salted butter, room temperature
1 1/4 cups plus 3 tablespoons sugar
3 large eggs, separated
3/4 cup Sugar Shack Maple Stout
2/3 cup freshly brewed strong coffee

Frosting:
1 pound bittersweet chocolate (54% to 60% cacao), chopped
2 cups heavy whipping cream
1 teaspoon instant espresso powder

Directions:
Preheat oven to 350°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high side. Line bottom of each cake pan with parchment paper round; butter and flour parchment. Place chopped chocolate in a medium metal bowl. Set bowl over a saucepan of barely simmering water and stir until chocolate is melted and smooth. Remove bowl from over water and set aside. Whisk flour, baking powder, baking soda, and salt in medium bowl to blend. Using an electric mixer, beat butter and 1 1/4 cups sugar in large bowl until fluffy and pale yellow, about 2 minutes. Add egg yolks 1 at a time, beating until well blended after each addition. Beat in lukewarm melted chocolate, then Sugar Shack Maple Stout and coffee. Beat flour mixture into chocolate mixture in 2 additions just until incorporated. Using clean dry beaters, beat egg whites and remaining 3 tablespoons sugar in another medium bowl until stiff but not dry. Fold 1/3 of egg whites into the cake batter to lighten, then fold in remaining egg whites in 2 additions. Divide batter between prepared cake pans (about 3 cups for each); smooth tops. Bake cakes until tester inserted into centers come out clean, about 30 minutes. Transfer cakes to racks and cool in pans 20 minutes. Invert cakes onto racks; remove parchment paper and cool completely. FROSTING Place chopped chocolate in a medium heatproof bowl. Combine whipping cream and espresso powder in a medium saucepan. Bring cream mixture to simmer over medium-high heat, whisking occasionally. Pour cream mixture over chopped chocolate; let stand 1 minute, then whisk until chocolate is melted and the mixture is smooth. Chill chocolate frosting until slightly thickened and spreadable, stirring occasionally, about 2 hours (or for quick chilling, place frosting in the freezer until thickened and spreadable, stirring occasionally, about 30 minutes). Using a serrated knife, trim rounded tops from both cake layers so that tops are flat. Place 1 cake layer, trimmed side up, on 9-inch-diameter tart pan bottom or cardboard round, then place on a rack set over a baking sheet. Drop 1 1/4 cups frosting by large spoonfuls over top of cake layer; spread the frosting evenly to edges with an offset spatula or butter knife. Top with second cake layer, trimmed side down. Spread remaining frosting evenly over top and sides of the cake. DO AHEAD Can be made up to 1 day ahead. Cover with cake dome and refrigerate. Let cake stand at room temperature at least 1 hour and up to 3 hours before serving.

Super Juice turkey with Brandy Stuffing

It is important to plan your Thanksgiving menus as early as possible. This Thanksgiving we can show you how to serve a “Super Juicy” turkey with Stuffing. We can guarantee it will melt in your mouth along with being very tasty.

Ingredients:
Fresh turkey turns out the best if you can't get one, a 20-25 lb Butterball will do. Although many turkeys claim to be self-basting, you still have to baste it yourself.

Directions:
Take your turkey out Thanksgiving morning and wash thoroughly. Pull back the skin on both sides near the back of the turkey. After you fold back skin, cut a stick of butter in half. Place _ of the stick of butter on each side, then pull the skin back over the butter. Take 1 cup of Virgin olive oil mix with _ cup white wine, 2 tablespoons garlic powder, 1 teaspoon salt, 1 teaspoon pepper, 1 tablespoon paprika. Mix together well. Pour liquid contents over the top of turkey, place turkey aside. At this point, you can pre-heat your oven to 350. Next, you want to prepare the stuffing. You will need 1 package of stuffing creme and add the butter, salt, pepper, onion, carrots, etc. Add one egg lightly beaten. Remove from stove, cover with d. You can add hot "Italian Sausage" cut or diced if desired. Mix stuffing well, prepare to stuff turkey. The last ingredient to add to the stuffing is the Brandy. Pour Brandy over stuffing and mix well. You should be able to get entire contents of stuffing inside the turkey. Place turkey in the oven at 350. After about 1 hour, open the oven and baste again with some melted butter and/or olive oil. After 2 hours Take the turkey out of the oven, remove the stuffing, place aside. Return turkey to oven without stuffing and continue to Bake for a total of about 5 hours. Remember about once every hour baste the turkey with the oil or more butter. For example, if you put the turkey in the oven at 7:00 am it should be done around 1:00 pm. I normally add cooking to turkey because opening the oven to baste causes it to lose heat, thus slowing down the cooking process. Remove turkey from the oven, cover with foil, let sit for about 30 minutes. If you begin to slice turkey immediately removing from the oven it tends to cremelt in your Mouth"! Happy Thanksgiving.

Ingredients:
1/3 cup RumChata
4 large sweet potatoes, scrubbed
3 Tbsp unsalted butter melted, plus more for greasing pan
1 Tbsp dark brown sugar
1 tsp kosher salt
1/4 cup coarsely chopped pecans

Directions:
Preheat oven to 400 degrees Fahrenheit. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool. Turn the oven down to 350 degrees. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the melted butter, brown sugar, salt, RumChata and pepper to taste. Whisk the mixture until smooth. With remaining butter grease an 8x8 inch casserole pan. Pour the sweet potato mixture into the pan and sprinkle the top with pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.

Fill a tall cocktail glass with ice. Pour in the liquors. Add the dash of grenadine and the lime juice. Then fill the glass with equal parts sour mix and the lemon-lime soda. Stir well.

T.G.I. Friday’s Jack Daniels Sauce

This recipe for T.G.I. Friday Jack Daniels Sauce serves/makes 1 cup

Ingredients:
1 teaspoon Onion Powder
1 tablespoon Tabasco Sauce
2 tablespoons Red Wine Vinegar
1/4 cup Jack Daniel
2 cups brown sugar
1/4 cup water
4 beef bouillon cubes
2 tablespoons Worcestershire sauce

Directions:
Combine all ingredients in a small saucepan. Bring to a boil, reduce heat and simmer for 15 minutes. Allow to cool and use as a sauce on any grilled meat or fish especially salmon! This recipe for T.G.I. Friday Jack Daniels Sauce serves/makes 1 cup

1 cup Silver Rum
4 oz Cointreau (Orange Liqueur)
2 oz Domaine Canton (Ginger Liqueur)

10-12 Sliced strawberries
Sugar to taste

Directions:
Add all ingredients into a container that is large enough to hold them all. Let steep for 1-3 hours. Don't worry if you don't have 1-3 hrs, it tastes just fine without steeping. Pour over ice, garnish with raspberries. Enjoy!

Build this cocktail in a chilled Champagne Flute, starting with the liqueur and finishing with the Champagne. Be sure to pour the Champagne slowly, gently stir the drink, garnish and serve.
