Caramel Apple Martini
This Caramel Apple Martini is a taste of fall!

Ingredients:
1-1/2 oz sour apple schnapps
1/2 oz butterscotch schnapps
1/2 oz cinnamon schnapps
1-1/2 ounces half-n-half
Directions:
Combine ingredients into a cocktail shaker with ice and shake vigorously. Then strain into a cocktail glass lined with cinnamon sugar.

Cayenne Chocolate Chip Cookies with Stout Ice Cream

1 can condensed milk
1 can evaporate milk
2 c sugar
1 bottle Alaskan Stout
Whole milk
Ice
Ice cream rock salt
Directions:
You may either use your favorite chocolate cookie recipe or choose a prepackaged mix. slice and Bake or totally premade dough will not work unless you are omitting the cayenne pepper. Follow the directions for the cookies adding a pinch of cayenne pepper as you mix the ingredients. Bake according to the directions.

Cayuse Cherry Bomb
Make with your favorite Gin

Ingredients:
1 peeled orange section
Ice
1 1/2 ounce(s) gin
1 ounce(s) sweet cherry juice
1 1/2 teaspoon(s) simple syrup
2 dash(es) bitters
Sparkling wine
Orange twist, for garnish
Directions:
Mash the orange section in a cocktail shaker. Fill the shaker with ice. Add the gin, cherry juice, simple syrup, and bitters and shake well. drain into glass and top with Sparkling wine; garnish with the twist.

Cenizas de Vainilla
As the family gathers to celebrate Dia de Los Muertos or Day of the Dead, it’s important to remember those who’ve passed on. We’re celebrating with a delicious drink known as Cenizas de Vainilla or Vanilla Ashes.

2 oz Skyy Vanilla Vodka
2 oz Frangelico
1/8 tsp vanilla extract
Dash of Vegan chocolate
Directions:
Shake all ingredients in a cocktail shaker with ice. Strain into a chilled martini glass. Garnish with Dia De Los Muertos decorations.

Champagne Dreams
A dream come true: pomegranate liqueur mixed with Cointreau, fresh orange juice, and champagne. Sparkling wine is fine, too, if you’re out of Champagne. Garnish with orange zest.

1 oz Pama (pomegranate liqueur)
1 oz Cointreau
1 oz fresh orange juice
3 oz champagne or Sparkling wine

Directions:
Shake the first three ingredients with ice. Gently stir in the champagne. drain into a flute and garnish with orange zest.

Cheese and Jalapeno Stuffed Burgers – Serve with Beaujolais Village
This cheese and pepper filled burger are delicious either plain or on a bun. Use your favorite condiments to dress it up to your liking.

Ingredients:
2 pounds ground beef
3 ozs cream cheese
2 tablespoons jalapeno peppers, minced
2 tablespoons onion, grated
2 tablespoons Greek seasoning
1 teaspoon kosher salt
1 teaspoon black pepper
Directions:
Combine ground beef onion, Greek seasoning, salt, and pepper in a medium mixing bowl. Form mixture into 8 thin patties. In a separate bowl, mix together jalapeno pepper and medium-high heat for 15 minutes. Turn once. Serve with buns and condiments. Greek Seasoning: 2 tablespoons dried oregano 1 1/2 tablespoons onion powder 1 1/2 tablespoons garlic powder 1 tablespoon salt 1 tablespoon fresh ground black pepper 1 tablespoon beef-flavored bouillon granules 1 tablespoon dried parsley 1/2 tablespoon ground cinnamon 1/2 tablespoon ground nutmeg Combine all ingredients and store in an airtight container. keep in a cool, dark place.

2.5 oz Pineapple-infused Vodka**
1.5 oz Coco Lopez Cream of Coconut
1 oz Organic heavy cream
Dash Angostura Bitters
10 oz Glass of ice
.5 oz Pineapple puree
Directions:
In a blender combine all the ingredients and top with ice. Pulse until the mixture is smooth. Pour it into a glass and serve. **Pineapple-infused Square One Organic Vodka Add one slice of organic dried pineapple (with no added sugar) to a 750-mL bottle of Square One Organic Vodka and let stand for 1 to 2 days. Taste daily until you like the flavor. Strain the liquid into a clean bottle. (Make sure to save the pineapple and puree it for the drink.)

Chicken & Lemon Kebabs with Herb Sauce – Serve with Chardonnay
Soak bamboo skewers in water for 20 minutes.

Ingredients:
12 (8) bamboo skewers
8 Meyer lemons
2 C. extra-virgin olive oil
5 tsp. minced garlic
2 tsp. dried Greek oregano
8 bay leaves
8 large skinless, boneless chicken breasts, cut into 1 cube
2 large sweet onions, peeled, cut into wedges and separated
3 green onions, minced
1/4 C. chopped fresh basil
1/4 C. chopped fresh cilantro
1/4 C. chopped flat-leaf parsley
1 Tbsp. chopped fresh tarragon
1 Tbsp. chopped orange zest
Pinch cayenne
Pinch allspice
Pinch ground cumin
Pinch cinnamon
Kosher salt and freshly ground pepper
Directions:
Put the skewers in a flat baking dish just large enough to hold them. Using a vegetable peeler, peel 1/2-wide strips from top to bottom of 5 of the lemons and set aside. Using a vegetable peeler or zester, remove the zest of 1 lemon and chop until fine. Set aside. Juice all 8 lemons into a Limeasuring cup. Combine 1/2 cup of the lemon juice, 1/2 cup of the olive oil, 3 tsp. of the garlic, the oregano and bay leaves in a large bowl. Add the chicken, lemon strips, and onions and toss to coat evenly. Cover with plastic wrap and refrigerate for 2-4 hours. Combine the remaining 1/2 cup lemon juice, the remaining 2 tsp. garlic, the green onions, basil, cilantro, parsley, tarragon, orange zest, cayenne, allspice, cumin and cinnamon in a food processor. With the moto running, add the remaining 1 1/2 cups olive oil in a slow steady stream until thoroughly incorporated. Add the remaining lemon juice to the dish with the skewers and add enough water to cover the skewers. Let sit for at least 20 minutes. Preheat the broiler or grill to medium-high heat. Thread the chicken on the skewers alternating the lemon strips and onion pieces.

Chicken In Riesling – Serve with Any Alsace Riesling
Alsace’s dry Riesling lends a gentle richness to this creamy, comforting meal.

Ingredients:
1 whole chicken (about 3 1/2 lb), backbone discarded and chicken cut French style into 8 pieces (see cooks' note, below)
1 tablespoon vegetable oil
3 tablespoons unsalted butter, divided
4 medium leeks (white and pale green parts only, finely chopped (2 cups)
1 cup dry white wine (preferably Alsatian Riesling)
1 1/2 lb small (2-inch) red potatoes
2 tablespoons finely chopped flat-leaf parsley
1/2 cup creme frache or heavy cream
Fresh lemon juice to taste
Directions:
Preheat oven to 350° F with rack in middle. Pat chicken dry and sprinkle with 1 teaspoon salt and a rounded 3/4 teaspoon pepper Heat oil with 1 tablespoon butter in a wide 3 1/2-to-5-quart heavy ovenproof pot over medium-high heat until foam subsides, then brown chicken in 2 batches, turning once, about 10 minutes total per batch transfer to a plate. Meanwhile, wash leeks and pat dry. Pour off fat from pot, then cook leeks, shallot, and 1/4 teaspoon salt in remaining 2 tablespoons butter, covered, over medium-low heat, stirring occasionally, until leeks are pale golden, 5 to 7 minutes Add chicken, skin sides up, with any juices from plate, carrots, and wine and boil until liquid is reduced by half, 3 to 4 minutes Cover pot and braise chicken in oven until cooked through, 20 to 25 minutes. While chicken braises, peel potatoes, then generously cover with cold water in a 2-to-3-quart saucepan and add 1-1/2 teaspoons salt Bring to a boil, then simmer until potatoes are just tender, about 15 minutes Drain in a colander, then return to sauce paned parsley and shake to coat. Stir creme frache into chicken mixture and season with salt, pepper, and lemon juice, then add potatoes.

Directions:
Season cutlets with salt and pepper, then dust with flour. Coat a saute pan with nonstick spray, add 2 T vegetable oil, and heat over medium-high.

Chocolate Chaos

Pour all the ingredients into a blender and blend until smooth. Pour into a chilled glass and garnish with the cracker. Add chocolate whipped cream on top for just a bit more chocolate.
