1 part Cognac
5 basil leaves
Splash of soda water

Directions:
Place the basil, syrup, and Ricard in the bottom of a rocks glass and crush the basil with the back of a teaspoon add the rest of the ingredients and build over ice. Top up with soda water. Garnish with fresh basil and a lemon twist. TWISTS For a beautifully citrus version, substitute Absolut RUBY RED for regular vodka. For a dryer (and more classic) flavor, substitute your favorite absinthe for Cognac.

Ingredients:
1 ¼ oz Cucumber vodka
1 oz Fresh cold lemonade
1 oz Fresh cold tonic water
¾ oz Cranberry juice

Directions:
In a tumbler/bucket glass, muddle a sliced and fitted orange round at the bottom, along with the optional drop of either orange or blood orange bitters. Fill glass with ice. Add ingredients, garnish with the skin oil mist of a dark green me peel (quartered) and a sliced round of fresh cucumber.

Ingredients:
4 lb corned brisket of beef
3 large carrots, cut into large chunks
6 to 8 small onions
1 teaspoon dry English mustard
large sprig fresh thyme and some parsley stalks, tied together
1 cabbage
salt and freshly ground pepper

Directions:
Put the brisket into a saucepan with the carrots, onions, mustard and the herbs. Cover with cold water, and bring gently to a boil. Simmer, covered, for 2 hours. Discard the outer leaves of the cabbage, cut into quarters and add to the pot. Cook for a further 1 to 2 hours or until the meat and vegetables are soft and tender. Serve the corned beef in slices, surrounded by the vegetables and cooking liquid.

1 ½ oz Gosling's Dark Rum
6 oz Gosling's Ginger Beer
1 ½ oz pineapple puree
2 sprigs of mint, one for the drink and the other for garnish
1 splash of orange juice

Directions:
Pour the rum and pineapple puree into the bottom of a Collins glass. Add one sprig of mint and muddle to incorporate all the ingredients. Fill the glass with ice and add the ginger beer. Add a splash of orange juice and garnish with the remaining sprig of mint.

1 can (16 ounces) jelled cranberry sauce

Directions:
Combine vodka, sweetened condensed milk, cranberry sauce, cranberry-orange juice cocktail, half-and-half, and cinnamon. Place in a blender and blend (in batches) until smooth. Cover and chill overnight to allow flavors to blend. Store in an airtight container in the refrigerator.

Crisp Roasted Potatoes and 5 Barrel Pale Ale Dipping Sauce

Dipping sauce

Cumin

Directions:
Bake potatoes and allow to cool completely; cut into cubes. Dredge in coating mix and Bake at 400? until crisp. For the dipping sauce, mix sour cream with cumin and cayenne pepper to taste. Add enough 5 Barrel Pale Ale to thin the sauce. Serve the potatoes warm with the dipping sauce on the side.

Ingredients:
1 can french onion soup (10.5 oz)
1 can beef broth (10.5 oz)
1 can or bottle of beer (12 oz)
1-3 lbs of pork tenderloin or some kind of roast
french rolls or something similar
Swiss or provolone cheese slices

Directions:
Pour beef broth, french onion soup, and beer into a crockpot. Put tenderloin or roast in a crockpot as a whole. Cook on low for 7 hours. About 30 minutes before time is up, shred the meat with a fork. Recover and continue cooking for the remaining 30 minutes. Slice open bread and put swiss cheese slices inside. Put in the oven at 200 degrees for 10-15 minutes or until toasty. Remove from oven and fill em up with meat.

1 ½ oz Hendrick's gin
¾ oz Domaine du Canton liqueur
Freshly squeezed lime juice
4 thin slices of cucumber
Orange wedge
2 oz club soda

Directions:
Pre-chill a cocktail glass and set aside. Cut three slices of cucumber into quarters and muddle in a mixing glass with the Canton and lime juice. When sufficiently pulverized, add Hendrick's and a level scoop of ice. shake for about 15 seconds. drain carefully into a pre-chilled glass while being careful to limit the amount of pulp. Add soda to the icy, crushed cucumber mixture. Swirl and drain again. Garnish with the remaining cake slice.

Ingredients:
2 oz fresh cucumber juice (peel cucumbers before juicing)
1 ¼ oz Housemade lemongrass-ginger simple syrup
(*see recipe below)
1/2 oz Freshly squeezed lime juice
4 oz Ginger ale

Directions:
Combine the above in a mixing glass. Rollback and forth with ice 3-4 times to chill and combine. drain over fresh ice into a Collins glass. Garnish with cucumber slices and a mint top. *(House-made Lemongrass-ginger Simple Syrup Recipe: Combine 50 oz simple syrup (1:1 granulated sugar boiled with water until dissolved), with 8 oz peeled and chopped fresh ginger root, and 15 oz finely chopped fresh lemongrass (peel, removing stiff outer layer and chop 1 ½ inch off ends, first, then discard and chop remainder). Cook together in a medium-sized pot on the stovetop. Simmer for 15 minutes then remove from heat. Allow cooling for 30 minutes. drain off debris through a fine-mesh strainer so the only clear syrup is left. Cover, label and refrigerate until ready for use. Syrup expires in one month from made on date.

Cutthroat Porter Cottage Pie

Ingredients:
1 lb ground beef
1 medium onion, diced
3 cloves garlic, minced
1 package frozen mixed vegetables
4 potatoes, cooked and mashed
2 package brown gravy mix
1 c Cutthroat Porter

Directions:
Add ground beef to a hot skillet. Once the ground beef has browned, add the onion and garlic and vegetables. While the vegetables and onion and garlic are cooking with the beef, follow the directions on the package of the gravy mix, substituting Cutthroat Porter for the water. Once thickened, pour half of the gravy into the beef mixture; keep the remainder to serve once served. Mix well and transfer to a greased casserole. Spread the mashed potatoes over the top. Bake at 400 deg until golden brown. Serve with the reserved gravy.
